916.341.21 order of the FOA on the taxation of the quality of slaughtered pigs from September 23, 1999 (State may 1, 2015) the federal Office of agriculture, under art. 5 by order of 26 November 2003 on beef, stop: Section 1 fleshiness s. 1 lean meat percentage the fleshiness is determined by the percentage of lean meat (PVM).
PVM, means the ratio of the weight of all the Red muscles striated, insofar as we can measure them after cutting, and the weight of the carcase.
PVM is calculated by one of the devices classification allowed in annexes 1 and 2 where the relevant estimation procedures are described.

S. 2 use and monitoring of devices of classification classification admitted according to annex 1 are used by the experts of the organization mandated, pursuant to art. 26, al. 1, let. a, of the order of 26 November 2003 on beef.
Classification apparatus admitted according to annex 2 are periodically monitored by experts from the mandated organisation.
The procedure for the first approval and monitoring an AUTOFOM or other device classification permitted in annex 2 is governed by Schedule 3.
The procedure for the admission of a new unit of classification in Schedule 1 or 2 is governed by Schedule 4.
Classification devices criticized by the organization mandated during the first procedure certification and monitoring may be used for taxation of quality as long as the observed defect has not been remedied.

Annex 1 (art. 1, para. 3, and 2, paras. 1 and 4) classification devices that must be used by a specialist of the mandated organization 1 Fat-O-Meater II 1.1 the carcass grading is done using the device called "Fat-O-Meater II" (FOM II).1.2 it is equipped with a probe of a diameter of 6 mm. The operable distance is between 5 mm and 125 mm. The measured values are converted by the device in estimation of the percentage of meat maigre.1.3 results the percentage of lean meat of the carcase shall be calculated using the following formula: ŷ = 64.01197 + 0.08170 x 1 - 0.76092 x2ou: ŷ = percentage (%) rated the lean meat of the carcase, x 1 thickness of muscle in mm, measured at the same time and in the same place as x 2 x 2 = back (including rind) blubber thickness measured in mm on the pending hot half-carcase, at 7 cm lateral to the midline of the carcase, between the second and the third side from the end.
