LAW 30 June 1952, n. 20. Manufacture and sale of ice creams, protection of foodstuffs against flies. (1) We the Captains Regent of the Most Serene Republic of San Marino We promulgate and publish the following law approved by the Great and General Council in its session on June 30, 1952: Art. 1. Anyone wishing to manufacture and sell ice cream must make a demand for Police Inspectorate urban who, having heard the opinion of the Government Authority and Health Officer, issue the authorization. This authorization is seasonal and therefore subject and endorsement Annual. Art. 2. The substances used in the preparation of ice cream must meet the requirements of authenticity and good condition. The milk must be pasteurized or previously boiled, even in the case of milk powder; has allowed us only if pasteurized cream; The eggs used must be fresh, having banned the use of preserved eggs. Art. 6. The metal spatulas and ladles used for the ice cream must be upheld in shape and length such that their grip never come in contact with the rim of the receptacles; the ice cream sampling must be done so as to avoid any contact between the hand of the seller and the product. These tools will have to be washed at every drawing by exposure to a potable water jet and stored in suitable containers to running water. Art. 7. The cones and baskets for the distribution of ice-creams must be stored in covered containers and protected from dust and flies; edibility must be recognized by the Health Officer. It will be allowed to use cardboard containers by the same Health Officer, when there are conditions of hygiene. Art. 8. The sale of ice cream can be made only in premises complying with the regulations. The ice cream shop stocks shall not be placed outside the public domain or otherwise open to the public, nor protrude from the openings of the exercises, in order to stay permanently indoors, providing, if necessary, to appropriate protection from contact with buyers. Art. 9. The meat preparations, bread, pastries, sweets, fruits, canned food, vegetables, and generally any food substance that is consumed without prior cooking or washing or dipellamento, which are not covered by housing protective or similar, they must be protected against contact of the flies with the use of suitable means (metallic nets, glass bells, veils, fans or other devices suitable for the purpose) that will be established by the Health Officer. Art. 10. Offenders under this Act shall be punished with fine from L. 300 to L. 3000 and, in case of relapse, with the withdrawal of the license to sell.
